Mulled apple cider

Warm apple cider with cinnamon, cloves and orange.

A drink with no alcohol in it, heated slowly with whole spices so the house smells like it.

Easy. Hands on for about 10 minutes. About 35 minutes start to finish. Makes 6 to 8 mugs.

Ingredients

  • 8 cups apple cider or cloudy apple juice
  • 3 cinnamon sticks
  • 12 whole cloves
  • 1 inch piece of fresh ginger, sliced
  • 1 orange, sliced
  • 2 tbsp maple syrup, if you want it sweeter

Steps

  1. Pour the cider into a large pot.
  2. Add the cinnamon sticks, cloves, ginger and orange slices.
  3. Heat on medium until it steams and tiny bubbles show at the edge. Turn the heat to low. A hard boil makes it taste flat.
  4. Simmer on low so the spices have time to give up their flavor.
  5. Taste it. Stir in the maple syrup if you want it sweeter.
  6. Pour through a strainer into mugs. If you have more cinnamon sticks, put a fresh one in each mug.

Use whole spices, not ground. Ground spices make the cider cloudy and gritty.
